I'd like to know whether it's possible to apply different settings (size, typeface, etc.) for different scripts (Latin, Arabic, Han, etc.) to wikipedia and wiktionary.

You could use custom CSS for the sites in question. Depending on your browser of choice, the method to do so may vary.

There also is an extension (for Firefox and for Chrome) that should simplify the task, although I haven’t tried it.
